Lincoln’s Impinger Conveyor Oven – Now VENTLESS

By Lee Davis, CFSP

Years ago, I became fascinated with impinger technology when I trained on a Lincoln Impinger oven. We cooked scallop shish-k-bobs quickly and perfectly. I remember watching the skewers of seafood and veggies ride along through the oven on a conveyor belt, while dozens of air nozzles barraged the food from above and below with jets of hot air that cooked them uniformly and to perfection. Impinger technology has only gotten better since then, and now, Lincoln, the company that pioneered impinger technology, is offering a Ventless Impinger II Express (1100 Series) Oven.

Traditional conveyor ovens use radiant heat only. Adding impinger air jets keeps hot air in contact with food surfaces at all times. It’s like convection taken to the extreme. It allows for heating, cooking, baking and crisping of foods two to four times faster than conventional ovens (depending on the food product cooked). Impinger conveyor ovens are perfect for many continuous cook and quick service applications such as quick serve pizza, sandwich, and sub shops.

The Ventless Impinger II Express, comes in single or double stack, and has all the great features of Lincoln’s electric 1100 Series oven. It has a front removable conveyor for easier cleaning. It improves product flow for reduced operation costs, and now, there is NO need for an expensive, noisy, energy consuming ventilation system or hood. A UL listed catalytic converter comes built-in.

The Ventless Impinger II Express is ideal for venues where installing a hood is not possible, or is cost prohibitive: historic buildings, high-rise urban buildings, airports or front-of-the-house. It’s also an ideal solution when there just isn’t enough room under an existing hood. Lincoln also offers a new Countertop Impinger CTI (V2500 Series) Oven, with digital controls and an even smaller footprint that fits almost anywhere you need it.

See Lincoln ovens on display at the 2016 National Restaurant Association Show, along with products from the rest of the Manitowoc Foodservice companies, in Booth 3601-3401, May 21-24, 2016, at McCormick Place in Chicago.
