Tuscan Vegetable Soup
- 1 lb. ground Italian sausage hot or sweet
- 1/2 lb. onions, chopped
- 4 Tbsp. garlic, minced
- 1/2 cup sherry wine
- 1/2 lb. zucchini
- 1/2 lb. yellow squash
- 1/2 lb. red peppers
- 1/4 lb. carrots
- 1/2 lb. Italian green beans
- 3 qt. heavy cream
- 2 qt. water
- 1 pint Marinara sauce
- Basil, thyme, oregano
- Corn starch and water
Brown the sausage in hot oil, add the onions and garlic, brown a little. Deglaze the pan with the sherry.
Steam the vegetables lightly, and add to the sausage mixture. Add the heavy cream, and water, and bring to a boil.
Add the marinara sauce and simmer. The result should be very light colored. Add the seasonings to the soup, add
salt and pepper to taste. Thicken soup very lightly with corn starch, let simmer, and skim. Correct seasonings.
This will hold very well in a steam table.
