    Ozzie has been cooking at the Arlington Diner for over two years. His specials are a big hit with the many patrons at Arlington, and his soups and sauces are well known. He is a native of Cairo, Egypt, coming to the USA about 20 years ago.

    Pork chops with balsamic roasted peppers
    • 2 Pork chops
    • 1 fresh red peppers
    • 1 tsp. olive oil
    • Ground black pepper to taste
    • 1 Tbsp. chopped garlic
    • 1/4 cup balsamic vinegar
    • 1/4 cup grated Romano cheese

    Brush the peppers with some olive oil, and ground black pepper. Roast in oven about 15 minutes, to brown, not blacken. Chop coarsely, then sweat briefly in some olive oil. Add the chopped garlic to the peppers, and continue to sweat. Pour the balsamic vinegar to the peppers when the garlic is cooked, and bring to a boil. Put enough Romano in the sauce just to thicken slightly. Charbroil the pork chops until just done, place them in the sauce and serve right away.
